Q: What is the difference between Natural White and Premium Maui Gold sugars?

A: They are both natural cane sugars; however:
White is your basic natural cane sugar. Takes 4 hours to make. Our intent is to remove as much molasses as possible.
Premium is a specialty sugar that takes approx. 48 hours to make. Crystals are larger and contain more molasses. Our intent is to boil the molasses into the crystal.

Q: How should I use Maui Brand® sugar?

A: Use it wherever you would use refined sugar. 1 to 1. Drinks (coffee, tea), on cereal, in baking. Your taste preference will tell you to add more or use less. (Technical answer: As for the sweetness factor, natural cane sugar and refined sugar are basically equal.)

Q: What is Maui Brand® sugar?

A: Natural cane sugar comes from the pressing or milling of sugarcane. The juice is made into a syrup where the crystals will grow as the mixture is boiled. The final mixture, called massecuite (a combination of crystals and molasses), is put into a centrifugal where it is spun to separate the molasses from the crystals and then "washed" with hot water to remove any excess molasses. The end product is natural cane sugar which contains a hint of molasses in its crystals. At this point, the majority of our cane sugar is shipped to C&H Sugar for refining into white, table sugar.
